Spongecake gets its name from its light and airy texture, which is achieved by whipping air into the batter.

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch (23cm) round cake pan.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, mixing well after each addition. Stir in the orange zest.

In a separate bowl, combine the orange juice and milk.

Gradually add the dry ingredients to the butter mixture, alternating with the orange juice mixture. Begin and end with the dry ingredients.

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.

Once the cake has cooled, dust it with powdered sugar and garnish with fresh orange slices if desired.
