Quinoa Carrot Loaf
Quinoa is actually a seed, not a grain, and is packed with protein and essential amino acids.
This is vegetarian, gluten free and high protein recipe. Dish can be prepared in 70 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 11.

Preheat the oven to 350°F (175°C). Cook quinoa according to package instructions and set aside.

Grate the carrots, chop the onion, and mince the garlic.

Heat olive oil in a pan over medium heat. Add the onion and garlic, and sauté until fragrant.

In a large bowl, combine the cooked quinoa, grated carrots, sautéed onion and garlic, eggs, breadcrumbs, Parmesan cheese, parsley, salt, and black pepper. Mix well.

Grease a loaf pan and transfer the quinoa mixture into it. Press it down firmly.

Bake for 45 minutes or until the top is golden brown.

Remove from the oven and let it rest for 10 minutes before slicing and serving.
