Stuffed Shell Pierogies
Pierogies are a traditional Polish dish, but the stuffed shell variation combines elements of Italian cuisine with the comfort of potato and cheese fillings.

Cook the jumbo pasta shells according to package instructions. Drain and set aside.

In a mixing bowl, combine the mashed potatoes, cheddar cheese, onion, sour cream, butter, salt, and pepper.

Preheat the oven to 350°F (175°C).

Stuff each cooked pasta shell with the potato mixture and place them in a baking dish.

Sprinkle the crumbled bacon and chopped green onions over the stuffed shells.

Bake for 20-25 minutes, or until the shells are heated through and the cheese is melted.
