Lunar Rhubarb Cake
The lunar rhubarb cake gets its name from the vibrant red color of the rhubarb, which resembles the surface of the moon during a lunar eclipse.

Preheat the oven to 180°C. Grease and flour a cake pan.

Wash and peel the rhubarb, then dice it into small pieces.

In a separate bowl, mix the flour and baking powder.

In a large mixing bowl, cream the butter and sugar until light and fluffy.

Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Gradually add the flour mixture to the butter mixture, mixing until just combined.

Gently fold in the diced rhubarb.

Pour the batter into the prepared cake pan and spread it evenly.

Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the cake cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
