Stuffed Portobello Panini
Portobello mushrooms are actually mature cremini mushrooms and have a rich, meaty flavor.
This is vegetarian, gluten free and high protein recipe. Dish can be prepared in 30 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Preheat the grill or a grill pan.

Remove the stems from the Portobello mushrooms and brush them with olive oil.

In a sauté pan, heat olive oil and add minced garlic. Cook until fragrant.

Add spinach and cook until wilted.

Place the Portobello mushrooms on the grill and cook for 4-5 minutes on each side.

Meanwhile, slice the roasted red bell pepper and mozzarella cheese.

Once the mushrooms are cooked, remove them from the grill and place them on a cutting board.

Spread the sautéed spinach on one mushroom, then top with roasted red bell pepper, mozzarella cheese, and basil leaves.

Season with salt and black pepper.

Place the second mushroom on top to create a sandwich.

Cut the ciabatta bread into halves and brush with olive oil.

Grill the bread for 2-3 minutes on each side.

Remove the bread from the grill and assemble the stuffed Portobello panini.

Place the stuffed mushrooms between the grilled ciabatta bread halves.
