Cubanelle peppers are also known as Italian frying peppers and are popular in Italian-American cuisine.

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the Cubanelle peppers and remove the seeds.
  3. In a pan, heat 1 tablespoon of olive oil over medium heat. Sauté the onion and garlic until translucent.
  4. Add the cooked quinoa, black beans, corn, diced tomato, salt, black pepper, cumin, paprika, and fresh cilantro to the pan. Mix well and cook for 5 minutes.
  5. Stuff the Cubanelle peppers with the quinoa mixture and place them in a baking dish.
  6. Drizzle the remaining olive oil over the stuffed peppers.
  7. Bake in the preheated oven for 25-30 minutes until the peppers are tender and lightly browned.
  8. Remove from the oven and let them rest for 5 minutes.
  9. Serve hot and garnish with grated cheese and additional fresh cilantro, if desired.
