Preheat the oven to 425°F (220°C).

In a mixing bowl, combine flour, sugar, baking powder, and salt.

Cut the cold butter into small cubes and add it to the dry ingredients. Use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.

In a separate bowl, whisk together the egg, milk, and vanilla extract. Pour this mixture into the dry ingredients and stir until just combined.

Transfer the dough onto a floured surface and gently knead it a few times. Roll out the dough to about 1/2 inch thickness.

Use a round biscuit cutter to cut out individual shortcakes. Place them on a baking sheet lined with parchment paper.

Bake in the preheated oven for 12-15 minutes or until golden brown.

Remove from the oven and let the shortcakes cool for about 10 minutes.

While the shortcakes are cooling, wash and slice the fresh strawberries.

To assemble the strawberry shortcakes, slice each shortcake in half horizontally. Place a spoonful of sliced strawberries on the bottom half, followed by a dollop of whipped cream. Place the top half of the shortcake on top.
