In another saucepan, heat the milk, sugar, cinnamon stick, lemon peel, and salt over medium heat until it reaches a simmer.

Slowly pour the milk mixture into the cooked rice, stirring continuously.

Cook over low heat, stirring occasionally, for about 20 minutes or until the rice absorbs most of the liquid and becomes creamy.

In a small bowl, whisk the egg yolks. Gradually add a small amount of the hot rice mixture to the egg yolks, stirring constantly to temper the eggs.

Pour the tempered egg mixture back into the saucepan with the rice, stirring well.

Cook for an additional 2-3 minutes, stirring constantly, until the mixture thickens.

Remove from heat and discard the cinnamon stick and lemon peel.

Transfer the rice pudding to serving bowls and sprinkle with cinnamon powder.
