  1. Preheat the oven to 180°C (350°F). Crush the digestive biscuits into fine crumbs. Melt the butter and mix it with the biscuit crumbs. Press the mixture into the base of a greased springform cake tin.
  2. In a mixing bowl, beat the cream cheese and caster sugar until smooth. Add the double cream and vanilla extract, and mix well. Beat in the eggs one at a time.
  3. Pour the cream cheese mixture over the biscuit base in the cake tin. Bake in the preheated oven for 50-60 minutes, or until the cheesecake is set but still slightly wobbly in the center.
  4. Remove the cheesecake from the oven and let it cool in the tin for 10 minutes. Then, carefully remove the sides of the tin and let the cheesecake cool completely.
  5. Once the cheesecake is cooled, drizzle the toffee sauce and caramel sauce over the top. Sprinkle with toffee pieces.
  6. Place the cheesecake in the refrigerator and let it rest for at least 2 hours, or overnight if possible.
  7. Serve chilled and enjoy!
