Squash posh
Butternut squash is rich in vitamins A and C, as well as fiber, making it a nutritious addition to any meal.

Preheat the oven to 200°C (400°F).

Peel and dice the butternut squash.

In a large bowl, toss the squash with olive oil, salt, pepper, and thyme.

Spread the squash on a baking sheet and roast for 30-35 minutes, or until tender.

In a separate pan, sauté the onion and garlic until translucent.

Add the roasted squash to the pan and mix well.

Transfer the mixture to a baking dish.

In a small bowl, combine breadcrumbs, Parmesan cheese, and parsley.

Sprinkle the breadcrumb mixture over the squash.

Bake for an additional 10 minutes, or until the breadcrumbs are golden brown.
