Preheat the oven to 375°F (190°C). Grease four individual souffle dishes with butter and sprinkle with flour.

In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute, stirring constantly.

Gradually whisk in the milk and cook until thickened, about 2 minutes. Remove from heat.

In a large bowl, whisk the egg yolks. Gradually whisk in the milk mixture.

Crumble the Stilton cheese into the bowl and stir until combined.

In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the cheese mixture.
