Preheat the oven to 375°F (190°C).

Cut the zucchini in half lengthwise and scoop out the seeds to create a hollow space.

In a skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.

Add the diced tomatoes and cook for another 2-3 minutes.

Remove from heat and stir in the spicy pepper jack cheese and cilantro.

Season with salt, black pepper, and red pepper flakes.

Fill each zucchini boat with the tomato and cheese mixture.

Place the zucchini boats on a baking sheet and bake for 20-25 minutes, until the zucchini is tender and the cheese is melted and bubbly.
