  1. Preheat the oven to 325°F (163°C).
  2. In a medium saucepan, heat the heavy cream over medium heat until it begins to steam. Remove from heat.
  3. In a separate bowl, whisk together the egg yolks and granulated sugar until well combined.
  4. Slowly pour the heated cream into the egg yolk mixture, whisking constantly.
  5. Add the vanilla extract and whisk until smooth.
  6. Slice the ripe bananas and arrange them in the bottom of four ramekins.
  7. Pour the custard mixture over the bananas, dividing it evenly among the ramekins.
  8. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  9. Carefully transfer the baking dish to the preheated oven and bake for 25-30 minutes, or until the custard is set but still slightly jiggly in the center.
  10. Remove the ramekins from the water bath and let them cool to room temperature.
  11. Once cooled, refrigerate the ramekins for at least 2 hours, or overnight.
  12. When ready to serve, sprinkle each ramekin with a tablespoon of brown sugar.
  13. Using a kitchen torch, carefully melt and caramelize the sugar until it forms a crispy top.
  14. Allow the brulees to sit for a few minutes to let the sugar harden.
  15. Serve and enjoy!
