Add the egg, vanilla extract, and pumpkin puree. Mix well.

In a separate bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, ground ginger, ground nutmeg, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for at least 1 hour.

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
