Instructions

  1. Preheat the oven to 325°F (165°C). Grease and flour a 9-inch (23cm) round cake pan.
  2. In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
  3. In a separate bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the butter mixture, mixing until just blended. Fold in the pecans, cranberries, apricots, cherries, and rum.
  5. Pour the batter into the prepared cake pan and smooth the top. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Remove from the oven and let the cake cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  7. Once cooled, wrap the fruitcake tightly in plastic wrap and let it rest at room temperature for at least 2 hours, or overnight, to allow the flavors to meld.
  8. Slice and serve the New Orleans fruitcake as desired.
