Coconut milk is not actually the liquid found inside a coconut, but rather the result of blending the coconut flesh with water and then straining it.

In a large bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and ginger.

In a separate bowl, mix together the coconut milk, coconut oil, vanilla extract, and maple syrup.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Heat a non-stick frying pan over medium heat and lightly grease with coconut oil.

Pour 1/4 cup of batter onto the pan for each pancake and cook until bubbles form on the surface, then flip and cook for another 1-2 minutes.

Repeat with the remaining batter.

Serve the pancakes topped with sliced banana, mango, pineapple, and shredded coconut.

Drizzle with maple syrup if desired.
