Smoked Gouda & Cheddar Mac and Cheese

Preheat the oven to 375°F (190°C).

Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.

Gradually whisk in the milk, then add the Dijon mustard, salt, and black pepper. Cook until the sauce thickens, stirring constantly.

Remove the saucepan from the heat and stir in the smoked Gouda and cheddar cheese until melted and smooth.

Add the cooked macaroni to the cheese sauce and mix well.

Transfer the mac and cheese mixture to a greased baking dish.

In a small bowl, combine the breadcrumbs, Parmesan cheese, and fresh parsley. Sprinkle the breadcrumb mixture over the mac and cheese.
