  1. Rinse the rice under cold water until the water runs clear.
  2. In a saucepan, bring water to a boil and add the rice. Cook for 10 minutes or until the rice is tender.
  3. Drain the rice and set aside.
  4. In a large skillet, heat olive oil over medium heat. Add the onion and garlic and cook until softened.
  5. Add the cherries, walnuts, salt, and black pepper. Cook for 2-3 minutes.
  6. Add the cooked rice to the skillet and stir well to combine. Cook for another 5 minutes.
  7. Remove from heat and let it rest for 5 minutes.
  8. Garnish with parsley before serving.
