Cherry Walnut Rice
Cherries are not only delicious but also packed with antioxidants and have anti-inflammatory properties.
This is vegetarian and gluten free recipe. Dish can be prepared in 35 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Rinse the rice under cold water until the water runs clear.

In a saucepan, bring water to a boil and add the rice. Cook for 10 minutes or until the rice is tender.

Drain the rice and set aside.

In a large skillet, heat olive oil over medium heat. Add the onion and garlic and cook until softened.

Add the cherries, walnuts, salt, and black pepper. Cook for 2-3 minutes.

Add the cooked rice to the skillet and stir well to combine. Cook for another 5 minutes.

Remove from heat and let it rest for 5 minutes.

Garnish with parsley before serving.
