Samosas with Mint and Tamarind Chutney

Boil the potatoes, peel and mash them.

Heat oil in a pan and add cumin seeds, coriander seeds, and chopped onions. Saute until onions turn golden brown.

Add green chillies, ginger, and peas. Cook for 2 minutes.

Add mashed potatoes, turmeric powder, red chilli powder, garam masala, and salt. Mix well.

Remove from heat and let the mixture cool.

In a separate bowl, mix all-purpose flour, oil, and water to make a dough.

Divide the dough into small balls and roll each ball into a thin circle.

Cut the circle in half and form a cone shape.

Fill the cone with the potato mixture and seal the edges.

Deep fry the samosas until golden brown.

Serve hot with mint and tamarind chutney.
