Rotel Potatoes

Wash and scrub the potatoes. Cut them into small cubes.

In a large bowl, combine the potatoes, diced tomatoes with green chilies (undrained), shredded cheddar cheese, sour cream, chopped green onions, salt, black pepper, and paprika. Mix well.

Drizzle olive oil on a baking sheet and spread the potato mixture evenly.

Bake in the preheated oven for 25-30 minutes or until the potatoes are tender and the cheese is melted and bubbly.
