  1. Preheat the oven to 450°F (230°C).
  2. Place the red bell peppers on a baking sheet and roast in the oven for about 20 minutes, or until the skins are blackened and blistered.
  3. Remove the peppers from the oven and let them cool slightly.
  4. Once cooled, peel off the skins and remove the seeds and stems.
  5. In a large skillet, heat the olive oil over medium heat.
  6. Add the onion and garlic and sauté until softened.
  7. Add the roasted red peppers to the skillet and cook for a few more minutes.
  8. Transfer the mixture to a blender or food processor and blend until smooth.
  9. Return the mixture to the skillet and stir in the heavy cream, Parmesan cheese, salt, and black pepper.
  10. Cook over low heat until the sauce is heated through.
  11. Serve the roasted red pepper cream sauce over pasta, grilled chicken, or vegetables. Enjoy!
