Rhubarb Raspberry Coffee Cake
Rhubarb is technically a vegetable, but it is often used in sweet dishes like this coffee cake.

Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.

In a large bowl, combine the flour, sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.

In a separate bowl, whisk together the egg, milk, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until just combined.

Spread half of the batter into the prepared cake pan. Top with half of the chopped rhubarb and raspberries.

In a small bowl, mix together the brown sugar and cinnamon. Sprinkle half of this mixture over the fruit.

Repeat the layers with the remaining batter, rhubarb, raspberries, and brown sugar mixture.

Sprinkle the sliced almonds over the top.

Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
