Peel and chop the potatoes into small cubes.

Chop the onion and garlic.

In a large pot, melt the butter over medium heat. Add the onion and garlic and sauté until softened.

Add the potatoes and vegetable stock to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender.

Using an immersion blender or a regular blender, blend the soup until smooth.

Stir in the milk, salt, and pepper.

Simmer for another 5 minutes.
