Rinse and soak the red beans overnight.

In a large pot, heat the vegetable oil over medium heat.

Add the onion, bell pepper, celery, and garlic. Cook until softened.

Add the dried thyme, dried oregano, paprika, cayenne pepper, bay leaf, salt, and black pepper.
