Pimento Corn Muffins
Pimento cheese is a popular Southern spread made with cheddar cheese and pimentos. These corn muffins are a delicious twist on the classic flavor combination.

Preheat the oven to 400°F (200°C) and grease a muffin tin.

In a large bowl, combine the cornmeal, flour, baking powder, salt, and sugar.

In a separate bowl, whisk together the egg, milk, and vegetable oil.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Fold in the pimentos, cheddar cheese, green onions, and jalapeno pepper.

Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

Bake for 15-20 minutes, or until golden brown and a toothpick inserted into the center comes out clean.

Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
