Blood Orange Tart with Cardamom Pastry Cream
Blood oranges get their name from their deep red or burgundy-colored flesh, which is caused by the presence of anthocyanins, a type of antioxidant pigment.

Preheat the oven to 180°C (350°F).

In a mixing bowl, combine the flour, butter, and granulated sugar to make the tart crust. Mix until crumbly.

Press the crust mixture into a tart pan and bake for 15 minutes.

In a saucepan, heat the milk and cardamom pods over medium heat until simmering. Remove from heat and let steep for 10 minutes.

In a separate bowl, whisk together the egg yolks, sugar, and cornstarch until smooth.

Slowly pour the milk mixture into the egg yolk mixture, whisking constantly.

Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened.

Remove from heat and stir in the vanilla extract.

Pour the pastry cream into the baked tart crust and let it cool for 1 hour.

Slice the blood oranges and arrange them on top of the tart.

Sprinkle powdered sugar over the tart and serve chilled.
