Potato Skins
Potato skins were popularized in the United States in the 1970s and have since become a popular appetizer in many restaurants.
This is vegetarian and gluten free recipe. Dish can be prepared in 90 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 8.

Preheat the oven to 400°F (200°C).

Wash the potatoes and pat them dry. Pierce each potato several times with a fork.

Rub the potatoes with olive oil, salt, and black pepper.

Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until the skins are crispy and the insides are tender.

Remove the potatoes from the oven and let them cool for 10 minutes.

Cut the potatoes in half lengthwise and scoop out the flesh, leaving a thin layer of potato on the skins.

Place the potato skins on a baking sheet and sprinkle with cheddar cheese.

Place a strip of bacon on top of each potato skin.

Bake the potato skins for 10-15 minutes, or until the cheese is melted and the bacon is crispy.

Remove from the oven and garnish with sliced green onions.

Serve hot with sour cream on the side.
