Fried rice originated in China as a way to use up leftover rice and ingredients, making it a popular dish for minimizing food waste.

Heat oil in a large skillet or wok over medium heat.

Add onion and garlic, and sauté until fragrant.

Add carrot and peas, and cook until vegetables are tender.

Push the vegetables to one side of the skillet and add beaten eggs to the other side. Scramble the eggs until cooked.

Add cooked rice to the skillet and stir to combine with the vegetables and eggs.

Season with soy sauce, salt, and black pepper. Stir well.

Cook for a few more minutes until everything is heated through.

Remove from heat and garnish with chopped green onions.
