  3. Create small wells in the tomato mixture and crack an egg into each well. Cover the skillet and cook until the eggs are done to your liking, about 5-7 minutes for medium eggs.
  4. Sprinkle crumbled feta cheese and fresh parsley over the top. Serve hot with crusty bread.
