Fig Newtons were first created in 1891 by a Philadelphia baker and were named after the town of Newton, Massachusetts.

  1. Preheat the oven to 350°F (175°C).
  2. In a food processor, combine dried figs, 1/4 cup of granulated sugar, and 1/4 cup of water. Process until smooth.
  3. In a mixing bowl, combine all-purpose flour, remaining granulated sugar, unsalted butter, vanilla extract, baking powder, and salt. Mix until crumbly.
  4. Press half of the mixture into the bottom of a greased 9x9-inch baking dish.
  5. Spread the fig mixture over the crust.
  6. Sprinkle the remaining crumb mixture over the fig layer.
  7. Bake for 25 minutes or until golden brown.
  8. Allow to cool for 30 minutes before cutting into bars.
  9. Serve and enjoy!
