Oatmeal cookies were first made in Scotland and were originally called ‘oat cakes’.

Preheat the oven to 350°F (175°C).

In a bowl, combine oats, flour, baking soda, and salt.

In a separate bowl, mix melted butter, brown sugar, and granulated sugar until well combined.

Add the egg and vanilla extract to the butter mixture and mix well.

Gradually add the dry ingredients to the wet ingredients and mix until just combined.

Stir in the chocolate chips.

Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.

Bake for 10-12 minutes or until golden brown.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
