  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine the oats, flour, baking powder, and salt.
  3. In a separate large bowl, mix together the melted butter, brown sugar, and granulated sugar.
  4. Add the egg and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until well combined.
  6. Fold in the chopped pistachios.
  7. Drop tablespoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are golden brown.
  9. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
