Heat olive oil in a pot. Add onion and garlic, and sauté until fragrant. Add carrots, potatoes, zucchini, and corn to the pot. Stir well. Pour in the vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 20 minutes. Remove from heat and let the soup rest for 5 minutes. Blend the soup until smooth using a blender or immersion blender. Return the soup to the pot and stir in the cream. Season with salt and black pepper. Heat the soup over low heat until heated through. Serve hot and enjoy!
