Peel and chop the celeriac into small cubes.

Slice the leeks and onion.

In a large pot, melt the butter and sauté the leeks and onion until softened.

Add the celeriac cubes and vegetable stock to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes until the celeriac is tender.
