Preheat the oven to 350°F (175°C).

Peel and dice the potatoes.

In a large pot, boil the potatoes until tender. Drain and set aside.

In a skillet, melt the butter and sauté the onion until translucent.

In a large bowl, combine the cooked potatoes, sautéed onion, cream of chicken soup, sour cream, cheddar cheese, salt, and pepper. Mix well.

Transfer the mixture to a greased casserole dish.

In a small bowl, crush the cornflakes and sprinkle them over the top of the casserole.

Bake in the preheated oven for 30-40 minutes, or until the casserole is hot and bubbly.
