  2. Peel and slice the potatoes into thin rounds.
  3. Slice the leeks into thin rounds.
  4. Grate the Gruyere cheese.
  5. In a large skillet, melt the butter over medium heat.
  6. Add the leeks and cook until softened, about 5 minutes.
  7. Add the sliced potatoes, salt, black pepper, and fresh thyme to the skillet. Stir to combine.
  8. Cook for another 5 minutes, until the potatoes are slightly softened.
  9. Remove the skillet from heat and stir in the heavy cream.
  10. Transfer the potato and leek mixture to a baking dish.
  11. Sprinkle the grated Gruyere cheese over the top.
