Shortbread originated in Scotland and has been a traditional Scottish biscuit for centuries.

In a mixing bowl, cream together the butter and sugar until light and fluffy.

In a separate bowl, sift together the flour, cocoa powder, and instant coffee.

Gradually add the dry ingredients to the butter mixture and mix until well combined.

Stir in the vanilla extract and dark chocolate chips.

Shape the dough into a log, wrap it in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 180°C (350°F).

Slice the dough into 1cm thick rounds and place them on a baking sheet lined with parchment paper.

Bake for 12-15 minutes or until the edges are slightly golden.

Allow the shortbread to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
