Remove the beet greens from the beets and set them aside.

Roast the beets in a preheated oven at 400°F (200°C) for 30 minutes or until tender.

Meanwhile, heat olive oil in a large skillet over medium heat.

Add garlic and sauté until fragrant.

Add beet greens, salt, and black pepper. Cook for 5 minutes, stirring occasionally.

Add lemon juice and cooked beets to the skillet.

Simmer for another 5 minutes.
