Mini Gingerbread Cheesecakes with Salted Caramel Sauce

Preheat the oven to 325°F (163°C). Line a muffin tin with paper liners.

In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of each paper liner.

In a large bowl, beat the cream cheese and granulated sugar until smooth. Add the molasses, ginger, cinnamon, cloves, eggs, vanilla extract, salt, and flour. Mix until well combined.

Divide the batter evenly among the paper liners, filling each about 2/3 full.

Bake for 20-25 minutes, or until the cheesecakes are set. Remove from the oven and let cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.

In a small saucepan, heat the heavy cream over medium heat until hot but not boiling. Remove from heat and stir in the salted caramel sauce until smooth.

Drizzle the salted caramel sauce over the cooled cheesecakes.

Refrigerate for at least 2 hours before serving.
