Preheat the oven to 400°F (200°C).

Roll out the puff pastry sheets and cut into rectangles.

Place the pastry rectangles on a baking sheet lined with parchment paper.

Bake for 12-15 minutes or until golden brown.

Meanwhile, slice the fresh figs.

In a bowl, mix the ricotta cheese with honey until well combined.

Once the pastry rectangles are cooled, spread a layer of ricotta mixture on each rectangle.

Top with sliced figs and sprinkle with crushed pistachios.
