  1. Preheat the oven to 375°F (190°C).
  2. Peel and slice the butternut squash into thin rounds.
  3. In a large skillet, heat the olive oil over medium heat. Add the garlic and thyme, and sauté for 2 minutes.
  4. Add the sliced butternut squash to the skillet and season with salt and black pepper. Cook for 5 minutes, until slightly softened.
  5. In a greased baking dish, layer the cooked butternut squash slices. Pour the heavy cream over the top.
  6. Sprinkle the grated Gruyere and Parmesan cheeses over the butternut squash.
  7. In a small bowl, mix the breadcrumbs with a tablespoon of olive oil. Sprinkle the breadcrumb mixture over the cheese.
  8. Bake in the preheated oven for 35-40 minutes, until the top is golden and bubbly.
  9. Let the gratin rest for 10 minutes before serving.
