Preheat the oven to 180°C (350°F).

Roll out the shortcrust pastry and cut out 6 rounds to fit into tart tins.

In a bowl, mix the curd cheese, caster sugar, egg yolks, and lemon zest until well combined.

Spoon the cheese mixture into the tart tins and smooth the tops.

Bake in the preheated oven for 20 minutes or until the tarts are golden brown.

Remove from the oven and allow to cool.

Once cooled, spoon a teaspoon of raspberry jam onto each tart.

Dust with icing sugar before serving.
