Twice-baked potatoes are believed to have originated in France in the 19th century and were known as ‘pommes de terre duchesse’ or ‘duchess potatoes’.

  1. Preheat the oven to 400°F (200°C).
  2. Scrub the potatoes and pierce them several times with a fork. Rub the potatoes with olive oil and sprinkle with salt and black pepper.
  3. Place the potatoes on a baking sheet and bake for 45-60 minutes, or until tender.
  4. While the potatoes are baking, cook the bacon until crispy. Crumble the bacon and set aside.
  5. Once the potatoes are cool enough to handle, slice off the top third of each potato lengthwise. Scoop out the flesh into a bowl, leaving a thin shell.
  6. Mash the potato flesh with sour cream, cheddar cheese, crumbled bacon, green onions, salt, and black pepper.
  7. Spoon the potato mixture back into the potato shells.
  8. Place the filled potato shells back on the baking sheet and bake for an additional 15-20 minutes, or until the cheese is melted and golden.
  9. Garnish with chopped parsley and serve hot.
