In a food processor, combine the all-purpose flour, almond flour, granulated sugar, and salt. Add the cold unsalted butter and pulse until the mixture resembles coarse crumbs.

In a small bowl, whisk together the egg yolk and vanilla extract. Add the egg mixture to the food processor and pulse until the dough comes together.

Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

On a lightly floured surface, roll out one disk of dough to 1/8 inch (3 mm) thickness. Cut out rectangles or desired shapes using a cookie cutter or knife. Repeat with the second disk of dough.

Place half of the dough shapes onto the prepared baking sheet. Spoon a teaspoon of raspberry jam onto each shape, leaving a small border around the edges. Top with the remaining dough shapes and press the edges together to seal.

Bake for 15-20 minutes, or until the pop tarts are golden brown.

In a small bowl, whisk together the powdered sugar and milk until smooth. Drizzle the glaze over the cooled pop tarts.
