  1. In a food processor, combine the all-purpose flour, almond flour, granulated sugar, and salt. Add the cold unsalted butter and pulse until the mixture resembles coarse crumbs.
  2. In a small bowl, whisk together the egg yolk and vanilla extract. Add the egg mixture to the food processor and pulse until the dough comes together.
  3. Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.
  4. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
