Key limes are smaller and more acidic than regular limes, giving these truffles a unique and tangy flavor.

  1. In a mixing bowl, combine graham cracker crumbs, cream cheese, key lime juice, powdered sugar, and vanilla extract. Mix until well combined.
  2. Roll the mixture into small truffle-sized balls and place them on a baking sheet lined with parchment paper.
  3. Place the truffles in the refrigerator and let them rest for at least 1 hour.
  4. In a microwave-safe bowl, melt the white chocolate chips in 30-second intervals, stirring in between, until smooth.
  5. Dip each truffle into the melted white chocolate, coating it completely. Place the coated truffles back on the parchment paper.
  6. Add green food coloring to the remaining melted white chocolate and drizzle it over the truffles for decoration.
  7. Return the truffles to the refrigerator and let them set for another 30 minutes.
  8. Serve and enjoy!
