  2. Brush the eggplant and zucchini slices with olive oil, then season with salt and black pepper.
  3. Grill the slices for 2-3 minutes on each side, until tender and lightly charred.
  4. In a baking dish, layer the grilled eggplant and zucchini slices, alternating with fresh basil leaves and slices of fresh mozzarella cheese.
  5. Pour tomato sauce over the top of the layered vegetables and cheese.
  6. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, until the cheese is melted and bubbly.
