Junior Mint Cupcakes
Junior Mint Cupcakes are inspired by the popular candy, Junior Mints, which were first introduced in 1949. They combine the flavors of chocolate and mint in a delicious cupcake form.

Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.

In a mixing bowl, combine the flour, sugar, cocoa powder, baking powder, and salt.

Add the egg, milk, vegetable oil, vanilla extract, and mint extract to the dry ingredients. Mix until well combined.

Gradually add the hot water and mix until the batter is smooth.

Fill each cupcake liner about two-thirds full with the batter.

Bake for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.

Remove from the oven and let the cupcakes cool in the pan for 5 minutes.

Transfer the cupcakes to a wire rack to cool completely.

Once cooled, pipe whipped cream onto each cupcake and garnish with a Junior Mint.
