Joulu Torttu is a traditional Finnish Christmas pastry that is often enjoyed during the holiday season.

  1. In a mixing bowl, cream together butter and sugar. Add the egg and mix well.
  2. Gradually add the flour and ground almonds, mixing until the dough comes together.
  3. Divide the dough into two equal portions and shape each into a disc. Wrap in plastic wrap and refrigerate for 30 minutes.
  4. Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.
  5. Roll out one portion of the dough on a lightly floured surface to about 3mm thickness. Cut out rounds using a cookie cutter.
  6. Place half of the rounds on the prepared baking sheet. Spoon a small amount of raspberry jam onto each round, leaving a border around the edges.
  7. Top with the remaining rounds and press the edges together to seal.
  8. Bake for 15-20 minutes, or until golden brown.
  9. Allow to cool on a wire rack. Dust with powdered sugar before serving.
