Preheat the oven to 200°C (400°F).

Roll out the puff pastry sheet and cut it into small squares.

Crumble the Roquefort cheese and place a small amount on each pastry square.

Chop the walnuts and sprinkle them over the cheese.

Drizzle honey over the cheese and walnuts.

Sprinkle fresh thyme leaves on top.

Brush the edges of the pastry squares with beaten egg.

Bake in the preheated oven for 15 minutes or until the pastry is golden brown.
