Peach Tarte Tatin
Tarte Tatin is said to have been created accidentally by the Tatin sisters in the 19th century when they were trying to salvage a burnt apple tart by flipping it upside down.

Preheat the oven to 200°C (400°F).

Melt butter in a 9-inch oven-safe skillet over medium heat.

Add sugar and vanilla extract to the skillet and stir until the sugar dissolves.

Arrange peach slices in a circular pattern on top of the sugar mixture.

Cook for 10 minutes or until the peaches start to caramelize.

Roll out the puff pastry to fit the skillet and place it on top of the peaches.

Tuck the edges of the pastry into the skillet.

Bake for 25-30 minutes or until the pastry is golden brown.

Remove from the oven and let it rest for 10 minutes.

Place a serving plate on top of the skillet and carefully flip it over to release the tart onto the plate.

Serve warm with a scoop of ice cream or whipped cream.
